Vegetable Breakfast - Sprouted lentils with Asparagus!

This asparagus breakfast definitely fits the creative veggies category! After cooking the bacon, the asparagus is gently cooked in the bacon grease and then paired with crunchy, crisp sprouted lentils.

Vegetable Breakfast - Sprouted lentils with Asparagus!

Ingredients

  • 1 bunch asparagus
  • 1/2 cup sprouted lentils
  • 5 strips of bacon
  • salt and pepper

Directions

(This is a great recipe when you already have sprouted lentils on hand. If you aren't familiar with sprouting legumes, read this tutorial)

  • Cut the bacon into 1/2 inch strips and place them in a skillet over medium-low heat.
  • Snap an end off of one asparagus spear. The asparagus will naturally break where the soft part meets the tougher stem. Use that spear as a guide to chop the bottoms off the whole bunch.
  • When the bacon is done cooking, place the strips on a towel to drain.
  • Keep the bacon pan on medium heat and add the asparagus. Cover with a lid and cook for about 5 minutes, until the asparagus has cooked through but not so much that it becomes limp.
  • Place the cooked asparagus on a plate, top with the bacon, then top with the sprouted lentils.
  • Pour a little bacon grease over the whole thing, season with salt and pepper.
